Known as Korean BBQ beef, bulgogi (펈) is thinly sliced beef that has been marinated and usually barbecued over an open flame.
In Korean, "bul" denotes fire, and "gogi" is a word for meat in general.
Though there are other varieties, such chicken and pork, beef bulgogi is the one that's commonly referred to by the moniker.
Though this food is most frequently served at restaurants as chargrilled Korean beef BBQ, there are many regional differences in how this dish is made.

The best cut is rib eye. Any tender, flavorful cut of beef, such as chuck eye, sirloin and tenderloin, works well too.
