Korean Spinach Side Dish

A basic Korean side dish (banchan, 반찬) made with spinach is called sigeumchi namu

The general phrase for a seasoned vegetable dish is namul, and the Korean word for spinach is sigeumchi.

Vegetables of all kinds can be used to produce nauml meals in Korea. Among the most popular is spinach.

On traditional celebrations, it is usually served as one of the three color vegetable dishes (samsaek namul). In bibimbap, geumchi namul is also very popular.

Making namul meals with green leafy vegetables normally includes blanching the vegetables and squeezing out the water content


however the cooking duration and seasonings vary.
